Ingredients for True Aussie Beef Short Rib Massaman curry:
– Australian Beef Short Rib 500 g
– Massaman Curry paste 120 g
(if Massaman Curry Paste is difficult to find, use red curry paste instead)
– Potato 300 g
– Toasted Peanut 100 g
– Coconut Milk 500 g
– Tamarind Paste 2 tbsp
– Fish sauce 2 tbsp
– Bay leaf 1-2
Easy 3 Step method to cook True Aussie Beef Short Ribs Massaman Curry
Step 1: Stew Australian Beef Short rib in coconut milk for at least 45 minutes or until the short rib is very tender.
Step 2: Stew the Australian Beef Short Ribs until they are almost tender, in another pan sauté the Massaman curry paste until aromatic and then add to the stew pot. And add potato, Bay leaf, toasted peanuts and boil until the potato is soft.
Step 3: Then season with tamarind paste, coconut sugar and fish sauce.
